Good Morning! Molly here! I live in a house full of runners… now, there is some confusion if we eat to run or run to eat… ok, truth, not a lot of confusion on my part – I run to eat. I enjoy food, all kinds of food – sweet food, salty food, savory food, snack food, finger food – you get the picture! I am always on the look out for something new to try, some yummy snack to satisfy a craving, inspiration for a new dish, a pasta/carbo filled fuel, a copy of a favorite recipe from a local restaurant, and the other day, while surfing Facebook, some one posted a picture of moose crunch and I realized just how long it had been since I had any, and, how easy it would be to make at home…. then the creative juices started flowing and this peppermint popcorn stuff was born!
I did find some inspiration on the internet and played around a bit until I found a combo that the whole family was happy with!

Super, easy, peasy!
- 1 12 ounce bag white candy melts
- 6 cups popped popcorn
- 1 1/2 teaspoon peppermint extract
- 1 12 ounce bag dark chocolate chips
- 6-7 candy canes, crushed
Place popcorn in a large bowl. Melt white candy melts in a double boiler. When completely melted, remove from heat and stir in peppermint extract. When well blended, pour over popcorn and mix well. Add crushed candy canes and 6 ounces of the dark chocolate chips (half a bag) and stir. Spread out on a cookie sheet (or two) covered in wax or parchment paper. Melt remaining dark chocolate chips and drizzle over popcorn mixture. Allow to cool and harden, break into chunks and enjoy!
