So, I think I blinked and missed spring… I mean, seriously, today it’s already in the 70’s with 94% humidity and it’s only 8:00!
But, I am a runner…and I took another 10×10 challenge and they frown on treadmills…so, I am heading out the door for a
swim run! And when I get back, I get to enjoy a lovely glass of this strawberry mint lemonade for a treat!
- 1 pint strawberries (about two cups – fresh or frozen)
- 2 cups water (divided)
- 1/2 – 3/4 cups sugar
- 1 1/2 cups lemon juice (fresh squeezed if you have the inclination)
- 3-4 sprigs mint
Boil one cup of water and the sugar until the sugar is dissolved (I base the amount of sugar off the sweetness of the strawberries – the sweeter they are, the less sugar I use.). Remove from stove and let cool. Meanwhile, blend remaining water with strawberries to create a puree… again, you can adjust water as needed. Pour puree into pitcher. Add lemon juice and sugar water. Finely chop mint sprigs and add them to the pitcher. Fill pitcher to top with cold water. Refrigerate and enjoy a cool treat after your workout!
