we are blessed with high metabolism
and sometimes that blessing is a curse…
with high metabolism comes an insatiable appetite.
And, honestly, we eat a lot of veggies and fruits,
but sometimes, I can’t help it,
I need (ok, want) chips and
salsa,
guac,
hummus,
artichoke dip…
Red Pepper Hummus
is a staple here.
I almost always have the ingredients on hand
and it doesn’t take but a few moments to whip up.
So, when that want arrives,
I am good to go!
RED PEPPER HUMMUS
- 3-4 small sweet red or orange bell peppers
- 1 can chickpeas or garbanzo beans
- 1/4 cup (approx) olive oil
- juice of 1 lemon
Chop red peppers into bite sized pieces. Place in a food processor. Drain chick peas/garbanzo beans and add to food processor. Begin blending and slowly add in olive oil. This is an approximate because sometimes the beans are wetter than others. Slice the lemon and squeeze in the juice from one half. Blend again and taste – you will know if you need to add more lemon. Enjoy with veggies (my youngest loves it with baby carrots) or blue chips (my favorite)!
