Crock-Tober is well underway…
over a week in…
Some days I wonder what I was thinking…
I start craving a good grilled steak
or a burger.
But, then I look at the crazy day
and I remember the cries of my children that they
“going to die soon”
“must have food to live”
and I pull out the crockpot and tackle dinner
so that there is a little less whine and a little more time for wine!
was stretching the bounds of my oldest boy…
somedays he freaks out about his food touching,
and sweet potatoes… well, they are not on his ‘like’ list
but this dish… even he gave it two thumbs up and requested seconds!
- 2 med sweet potatoes – peeled and cut into bite sized pieces
- 1 can sliced water chestnuts (not a must but the crunch was a nice texture change)
- 1 can pineapple tidbits
- 4 boneless, skinless chicken breasts
- 2 TBSP minced onion
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper
- 2 tsp ground black pepper
- 2 tsp ground ginger
- 2 TBSP Worcestershire sauce
- 1 TBSP fresh lime juice and the zest of the lime
Drain pineapple tidbits into a measuring cup util you have about 1/4 cup of pineapple juice. Add seasoning to pineapple juice and mix well. Place sweet potatoes in bottom of crock pot. Put chicken on top of potatoes. Pour pineapple juice mixture over chicken and sweet potatoes. Place water chestnuts and pineapple on top of chicken. Cover and cook on low for 7-9 hours. My chicken wasn’t completely thawed and this was plenty of time! I served with rice and squirted a little extra lime juice over the whole dish!
