The crock pot is a great invention…
it’s a huge time saver…
and we all know I have a slight crush on it!
But, somedays, I admit it,
I’m just not feeling
And, that’s a problem during Crock-Tober
So, I we a little less creative on this,
a little more basic…
and the results?
Well, there weren’t any leftovers!
- 1 pound ground turkey
- 1 jar of salsa
- 1 can mexi-beans
- 4-5 potatoes, diced
- 2 tsp Southwestern Seasoning
- 1 small onion, diced
- shredded mexi-cheese to garnish
- sour cream to garnish
Brown ground turkey with onion until cooked through. Place in slow cooker, Add salsa, beans and potatoes. Stir well. Cook on low for 7-8 hours or high for 4-5. Spoon into bowl and garnish with cheese and sour cream. I enjoyed mine with tortilla chips – not sure if anyone else waited long enough for me to get them out of the pantry! 🙂
