Welcome to Crock-Tober! In October, I challenge myself to create a crockpot based dish every day for 31 days… and usually a different dish every day – some are old favorites that
my family has enjoyed and given the thumbs up to, and some are brand new creations… there are breakfasts, main dishes, side dishes, appetizers, and desserts – basically, anything goes!
I am kicking off this month with a brand new creation…so I can’t give you a rating of whether or not the kids (and the hubby) enjoyed it… but after posting a few pics on instagram and Facebook, I am already getting requests for the recipe so I thought I would go ahead and share… feedback, comments, suggestions are welcome!
- 2 pounds boneless skinless chicken (I used tenders because it is what I had on hand)
- 1 1/2 cups greek yogurt
- 1 envelope ranch dressing mix
- 1/4 cup of butter melted
- 1 sleeve ritz crackers
Lightly oil the inside of the crock pot. Place chicken in the crock (mine was still frozen – who has time to think ahead?!? LOL). Mix Greek yogurt with ranch dressing mix and spread over chicken. Crush sleeve of ritz crackers and cover the ranch/yogurt/chicken. Drizzle melted butter over the top of everything. Cook on high 4-5 hours or low for 8-9 hours.
