or bliss as my family calls them … I don’t like coconut so I have no idea!
These go in the five ingredient or less category and can easily be whipped up in about 20 minutes if you skip the roasting step – it’s not necessary but it does add something. When my hubby was wanting a sweet at 8:00 at night, I skipped that step and he didn’t seem to care! And, yes, these are ingredients I usually have on hand… LOL!
- 1/4 cup sliced almonds
- 2 cups coconut
- 5 TBSP Sweetened Condensed Milk
- 1/4 cup DARK chocolate chips (my hubby likes the dark… LOL!)
Preheat oven to 400. Place coconut and almonds on a cookie sheet and spread out.
Place in oven and toast for about 4 minutes. It won’t take long before you see the edges of the coconut start to brown. Allow to cool. (This is why I sometimes skip this step). After cooled, chop into small pieces (I use a mezzaluna), place in a bowl and add sweetened condensed milk.
And now is the time to get your hands dirty… get in there and mix together well. It will start clumping together and getting sticky. After everything is mixed together well, roll into balls. You will want to squish things together well so that the balls hold their shape.
After all the coconut mixture has been rolled into balls, melt the chocolate. I prefer to do this in a double broiler and then pour it into an icing bag, but you could use the microwave and a plastic baggie too. When the chocolate is thoroughly melted, snip off the tip of the icing bag (or the corner of the plastic baggie) and drizzle chocolate over the tops of the balls. You probably should allow the chocolate to harden a bit before serving, but my family is usually in the kitchen jockeying for the best position to grab the first chocolate coated one so obviously it’s not a necessary step!
