So, last week, we talked about getting ready, making our packing lists and doing some planning… and of course, in the planning department, one of the first things I think of is food (remember me, I’m the one who runs because she loves to eat!) I’m a newbie to runDisney, and really, a newbie to Disney over all (but quickly finding myself addicted!) but I have heard that one of the hardest part of the races is the early wake up time. Having been to a few races with my hubby, I know that an early start can often mean that the breakfast options at the hotel are what ever you can find in the vending machine, which, let’s face it, aren’t the best options for fueling you on a run… so, I started digging through my stash of recipes and thinking about what would travel well and fuel us well and, breakfast cookies came to mind!
These are quick, simple, 6 ingredient, power packed, flavor filled bites of yumminess!
- 2 cups oatmeal
- 1/4 cup honey
- 1 cup peanut butter (pbo if you’re a toddler in my house)
- 1/4 tsp cinnamon
- 1/4 cup mini chocolate chips
- 1/2 cup smushed bananas (about two ripe ones)
Mix oatmeal, cinnamon and chocolate chips together. Add honey, peanut butter and bananas and stir until well blended. I usually use a large mixing bowl and a fork – why drag out the big kitchen aide? Place large spoonful on a cookie sheet and flatten slightly with a fork. Bake for about 18 min at 325.
These freeze very well – two cookies fit perfectly in a snack size zip bag. When you are ready to eat, heat on high for about 30 seconds (straight from frozen) and enjoy with a nice cuppa! I also have been known to throw in some flax seed and/or wheat germ for an added bonus.
So, my plan is to make a bunch of these, freeze them (and then hide them in the outside freezer from the kids and hubby) and take them to Disney with us – they will be great for our early morning fuel ups!
