I was at a farmer’s market at church a few weeks ago
and the organizer was handing out recipes…
I grabbed one, just to be nice, honestly…
but, boy am I glad I did!
This dip has been a staple in our house ever since!
It is yummy, refreshing and super easy!
- olive oil
- 2 medium zucchini, diced
- 2 cloves garlic
- 1/2 cup greek yogurt
- 2 TBSP chopped fresh mint
Heat the olive oil in a large skillet. Saute garlic and zucchini until tender and translucent. Transfer to a food processor. I found if I did it in little batches it was easiest. Add yogurt and mint and puree until smooth. Serve with Blue Chips
