My family can not get enough of this stuff!
But, we get a little tired of the same ol’, same ol’…
So, I branched out… and boy am I glad I did!
- 1 pound shrimp, peeled and deveined
- 1 pkg penne – cooked and drained
- 2 roma tomatoes – diced
- 1/2 cup mozzarella – shredded
- 1/2 tsp crushed red pepper
- 1 tsp Tuscan seasoning
- olive oil
- alfredo sauce
- 2 TBSP butter
- 2 cloves garlic, minced
- 1 TBSP flour
- 1/4 cup milk
- 1 ounce cream cheese (I used neufatchel)
- 1/4 cup white wine or chicken broth
To make alfredo sauce, melt butter in large sauce pan. Add garlic and salute. Whisk in flour until browned. Slowly add in milk, stirring constantly until thickened. Stir in cream cheese and wine until smooth.
In the meantime, preheat oven to 400. Coat shrimp with olive oil and Tuscan seasoning and bake for 6-8 minutes until pink and firm.
Reduce oven temperature to 350. Place shrimp, pasta, alfredo sauce, mozzarella cheese, tomatoes, and red pepper in bowl and mix well. Place in a baking dish and bake about 10 minutes until browned and cheese is fully melted. Top with parmesan cheese and enjoy with some crusty bread and a nice glass of wine!
