My family loves chocolate chip banana muffins,
so much so that even when I get a large bag of bananas on sale,
I have a hard time keeping up with demand…
And, I had some strawberries that were a little past yummy
(you know, starting to get mushy and not so pretty…)
so, I thought strawberry muffins might be a good option.
boy was I right!
Dad didn’t even get a sample from the first batch because I couldn’t keep the kids from inhaling them!
- 1/4 cup olive oil
- 1/2 cup milk
- 1 egg
- 2 tsp baking powder
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1 3/4 cup flour
- 1 cup chopped strawberries
Combine dry ingredients. Add in eggs, milk and olive oil, stirring after each addition. Gently fold in strawberries. Fill greased muffin cups 3/4 of the way full and back at 375 for 23-25 minutes. Cool in pan for 5 min before moving to cooling rack
