It’s like the trifecta…bacon, chicken and ranch all together… and then you throw in some pasta and a little cream sauce… oh my word… taste buds doing the happy dance!
And as an added bonus, this is an easy dish to put throw together on a chaotic week night or at the end of a long weekend!
We have started a new ‘voting’ or rating system for meals around here – using a scale of 1-5 every one votes – this one got an average of 4.75! I liked how easy it was and the punch it packed for very little work… the family all liked the way it tasted!
Bacon Chicken Ranch Pasta
- 8 slices of bacon – cooked – drippings reserved
- 3 chicken breasts – cut
- 3 TBSP Ranch dressing mix
- 1 1/2 cups milk
- angel hair pasta (or one of your choice)
Cook bacon – I prefer to do this in the oven… that’s part of what makes this dish so simple! Place your bacon on a cookie sheet (about 8 strips fill my cookie sheet), place in the oven and then turn on to 425. When your oven preheats, your bacon should be close, if not completely, cooked. For this recipe, while my bacon was cooking, I used the time to cut my chicken. I then removed the bacon from the cookie sheet to a plate lined with a paper towel to drain it and poured the rest of the bacon grease in a skillet. Cook the chicken in the skillet with the bacon drippings. While chicken is cooking, start water boiling for pasta. When chicken is cooked through, add in bacon, crumbled. Then mix the Ranch dressing mix with milk. Add milk to skillet with chicken and bacon, stir until thickened. Serve over pasta. A nice crusty bread, a side salad and a glass of wine are perfect compliments!
