Day 2 of Crock-tober!
This a great edition to your dinner rotation for a Taco Tuesday night… or, like we chose, a burrito bowl. This is an easy go to meal, less than five ingredients and completely adaptable to your family’s taste.
Salsa Verde Chicken
*2 lbs chicken breast or chicken tenderloins
*1 jar salsa verde
*1 can black beans (rinsed and drained)
Place chicken in crockpot, pour salsa verde over the top and cook on low for 6 hours or high for 3 hours. About 30 min before serving, add in black beans. Shred chicken, and serve over rice, in a taco shell or tortilla, over nachos. Sprinkle with cheese, tomatoes, avocado… your imagination is the limit!
